About us: Doesn't everyone love chocolate milk? As a kid my mom would use the powdered Nestle's Quick to make chocolate milk for me. When the undissolved bits settled to the bottom of the glass I would like to shake them into my mouth for a finish to the treat. An even more special treat would be when my dad would make Mexican style chocolate. This was a small brick of cinnamon and chili spiced chocolate, either Ibarra or Abulita brand, melted in milk and heated up into hot chocolate. It was the best hot chocolate that I ever had even to this day. It is great hot or cold.Jump to the present day versions of chocolate milk. You can make it at home using Hershey's Syrup or a generic version of it. I also see lots of chocolate milk in the stores already packaged into chugs or half gallons. It seems that chocolate milk is ubiquitous. But when I compare the ready to drink chocolate milk to the Mexican chocolate milk that I still make, there is no comparison in the taste. Maybe it is because I am using the great whole, grass-fed Ayrshire milk from our dairy as a base-no doubt this makes a difference-but the chocolate itself is so very different as well. So I sent Rebecca, my kitchen goddess, on a mission to find out why. She contacted Andrew Hoffmaster, a food scientist and chocolate specialist for a quick lesson on chocolate and chocolate milk.According to Andrew, the common chocolate milk that we have in stores today really is not chocolate milk at all. The chocolate is in the milk to color the milk brown, and not to flavor the milk like chocolate. Commercial chocolate milk is made with cost efficiency. To cut costs, food scientists blend cheap ingredients and then try to replicate the good mouth feel and flavors of quality ingredients by adding stabilizers artificial flavors, gums, etc.. Oh. That's major. I guess that's why it doesn't taste very good to me!

This news left me wondering, what if we made a really good chocolate milk, using our milk, the best chocolate, pure cane sugar, and flavored with cinnamon and chiles like the Mexican chocolate that I love? Wouldn't that be nice to have an honest chocolate milk out there that rocked the palate? I asked Rebecca to come up with a recipe. As usual, we were in for another round of self guided education on ingredient costs and options, production capabilities, pricing and branding.

What Rebecca found was that the best option for chocolate was not chocolate at all, rather, it was Dutch Cocoa. There are many types available out there, but true to form, we chose one of the most expensive varieties.
